Elaboration

Organic and biodynamic viticulture.

Méthode traditionnelle. Made from grapes grown in the vineyards of the Can Mayol estate, located on the former Civil War airfield in Vilobí del Penedès. Base wine produced on the same estate.

Partial fermentation of the Xarel·lo in 500-litre barrels. Aged for 60 months in the dim light of the cellars housed in the old air-raid shelter built by the Republicans beneath the wartime airfield.

Disgorged on demand to ensure it reaches our customers in optimal condition.

Tasting note

View: Pale yellow color, with a clean and elegant appearance.
Nose: Dried fruits with a very subtle hint of toast.
Mouth: Very delicate and exceptionally refined on the palate. Clean taste with good acidity.

Perfect for pairing with hearty dishes, game meat, and stewed meat. It generally pairs well with all types of Mediterranean cuisine.
