Elaboration
Biological aging wine from organic and biodynamic viticulture. Xarel·lo sourced from the old Republican airfield at the Can Mayol estate, located at 250m altitude, with clay-limestone soil. Hand-harvested in crates, selecting the healthiest grapes and treating them with great care. Biological aging in clay amphorae.
Tasting note
View: Pale gold and lemon yellow tones, with a slight cloudiness.
Nose: Hints of green almond, ripe apple, dried fruits like hazelnut, and herbaceous notes of fennel and thyme.
Mouth: Fresh entry, with good acidity. Dry, with salty and mineral notes.

Pairing
It pairs well with anchovies from l’Escala, oysters, and shellfish such as langoustines.
