Elaboration

Organic and biodynamic viticulture. Elisenda expresses the freshness and acidity characteristic of the high-altitude vineyards of Parellada Montònega, 60 years old, from the Pla de Manlleu area, where the family of winemakers of Teresa Nin comes from, along with the minerality and salinity provided by the red Xarel·lo planted around the Masia de Can Mayol estate in Vilobí del Penedès, from where the family of Josep Mitjans originates. With the creation of the sparkling wine Elisenda, named after their daughter, Teresa Nin and Josep Mitjans aim to pay tribute to the generations of winemakers who preceded them. The first fermentation of this sparkling wine takes place in clay amphorae, a method with which Loxarel was a pioneer and has a long history.

Tasting note

View: Onion peel color, pale tones, and a fine, constant rosary of small bubbles.
Nose: Elegant and subtle, with autolysis notes and hints of minerality, undergrowth, and fennel.
Mouth: Soft and delicate, yet with good character.

Pairing

A very gastronomic sparkling wine that pairs with countless possibilities, but we recommend it with black rooster from the Penedès, blue fish such as grilled salmon or sole with almond sauce.
