White Grenache and Xarel·lo

Elaboration

Organic and biodynamic viticulture. The Grenache comes from the high-altitude area of Penedès, at over 700 meters above sea level, while the Xarel·lo is sourced from the Can Mayol estate, at 250 meters of altitude. During the winemaking process, the grapes macerate with the skins for six hours to preserve the primary fruit aromas and prevent oxidation of the must. According to Greek mythology, Amalthea is the nymph represented as the goat that nursed Zeus. The goat, the horn, and the constellations form the foundation of biodynamic agriculture.

Tasting note

View: Pale and bright tones with greenish reflections.
Nose: Hints of ripe fruits such as water pear and peach, with a subtle finish of Mediterranean underbrush.
Mouth: Fresh entry with pleasant acidity, notes of stone fruit, and easy to drink.

Pairing

Warm salads, seafood rice dishes, and white fish. Cold starters, appetizers. A social wine.
