Elaboration

Organic and biodynamic viticulture

A natural amphora wine, crafted with respect for the grape’s full expression. Fermented on skins using only wild yeasts, with no added sulfites. Unfiltered and unstabilized—just pure, living wine. Whole berries are gently destemmed straight into 720-litre clay amphorae, where both alcoholic and malolactic fermentations unfold spontaneously. The wine then rests for six months in the same vessel, with a partial skin maceration that brings depth, texture, and a soulful connection to the land.

Tasting note

View: Pale straw in colour with subtle greenish hues. Its appearance may be slightly cloudy, as the wine has not been filtered.
Nose: Aromatically expressive, with fresh notes of pink grapefruit and hints of Mediterranean underbrush, evoking wild thyme. A fragrant and vibrant profile.
Mouth: Creamy and fresh, featuring Mediterranean undergrowth aromas like thyme, alongside white fruit notes. This wine is complex and persistent on the palate.

Serve at 6-8°C

Pairing

Excellent with raw fish, including ceviche and tiradito, as well as other dishes that offer refreshing acidity.
