Elaboration

Organic and biodynamic viticulture. Traditional method. Over 109 months of aging in the cellar. It is served in the original bottle, with a wire cap and without disgorging. Presence of the natural lees. A brut nature with long aging, of which only 1,000 bottles are produced per harvest.

Tasting note

View: Pale gold and cloudy. Fine, delicate, and persistent bubbles.
Nose: Great aromatic complexity. Notes of ripe fruit, citrus, pastry (vanilla, cream, and brioche) resulting from the long aging in the bottle (autolysis).
Mouth: Structured, crisp, and creamy. Extraordinarily fruity, with good freshness and acidity. Dried apricots and candied peach, with an interesting carbonation.
