Red Xarel·lo. An indigenous variety from the Penedès region that has been recovered. More rustic than the white Xarel·lo, with reddish-colored skin. It ripens later.
Elaboration
Organic and biodynamic viticulture. <span class=”S1PPyQ”>Sourced from vineyards in the Penedès plain, at 250m altitude above sea level. This wine is made with partial maceration of whole grapes during fermentation in clay amphorae. It is then allowed to refine for a minimum of five months in the same amphorae. The grape skins provide protection, structure, aromas, and complexity.</span>
Tasting note
View: White with iridescence and grayish tones.
Nose: Notes of fennel and bay leaf. Hints of Mediterranean fruit (mandarin) and white flowers (almond blossom).
Mouth: Fine and elegant. Very good acidity with citrus undertones.

Pairing
Most lightly seasoned fish or those with white sauces, especially tuna or salmon. Appetizers and rice dishes.
